Ready-to-Eat and Ready-to-Cook lines, packaged curries, gravies, sauces, frozen foods, convenience foods and meal kits that need a standardised shelf-stable gravy base.
Retort product
A commercial tomato gravy base built for production at industrial scale that still carries the character of a classic Indian gravy. Made from carefully chosen tomatoes, onions, herbs, spices and edible oil, cooked under standardised conditions and retort sterilised — commercial sterility and ambient shelf life, with no artificial preservatives.
Also supplied as commercial tomato gravy base · retort curry base · shelf-stable cooking sauce base · ambient culinary base · Indian sauce base · onion tomato masala base · simmer sauce base · base gravy for restaurant kitchens
Product overview
Cooked under standardised conditions and then sterilised by retort processing, the base reaches commercial sterility and ambient shelf life while its flavour, colour, texture and consistency stay where they were set. It works as the cooking base for Ready-to-Eat and Ready-to-Cook meals, packaged curries, sauces and gravies, frozen products, meal kits and institutional catering — simplifying production and holding product quality steady across a commercial run.
Technical documentation
Composition and physico-chemical parameters, customisation variables, the process flow and its control points, the nutritional declaration and the commercial terms — the data set an NPD, QA or procurement team works from before raising a trial order.
Nutritional values are established by laboratory analysis on the finished, processed product — not calculated from the recipe — and declared per 100 g on the pack for the market you are selling into.
Ask us for the current specification sheet and certificate of analysis for the standard formulation, or for the analysis run on your own customised version.
A low-acid thermally processed food is regulated by the market it lands in, not by the market it left. These are the frameworks a tomato gravy base is held to, and the ones your documentation has to satisfy.
Certification held at the manufacturing site is confirmed project by project. Tell us the destination market and the retailer or importer you are selling to, and we will confirm what is already in place and what has to be arranged.
Where it goes
Dishes built on this base: butter masala and makhani, kadai, korma, bhuna, rogan josh, chettinad, tikka masala, jalfrezi, dopiaza, chana masala, paneer gravies, dal makhani and biryani bases — and the tomato-led pasta and pizza sauces that sit alongside them on a foodservice menu.
Heat penetration and seal integrity studies settle which pack suits your volume and your filling line before anything is committed.
The technical side
If you are briefing an R&D, NPD or quality assurance team, or answering an importer’s technical questionnaire, these are the concepts a retort gravy base project is actually built on — and the terms an auditor, a process authority or a co-manufacturer will expect to find in the file.
Thermal processing is half the work. The other half is the documentation — the scheduled process, the heat penetration data, the microbiological results and the shelf-life study — that lets a co-manufacturer run the product and an authority clear it.
Industries we serve
The base is developed for food manufacturers, food service providers and commercial kitchens that need authentic Indian flavour, operational efficiency and production that scales.
Ready-to-Eat and Ready-to-Cook lines, packaged curries, gravies, sauces, frozen foods, convenience foods and meal kits that need a standardised shelf-stable gravy base.
One base cooked centrally and shipped ambient, so the same curry arrives in every QSR, casual-dining and takeaway outlet without a chef rebuilding the masala each morning.
Shorter ticket times and consistent output from a small kitchen, with no overnight prep and no cold chain to manage between locations.
Hotels, restaurants, caterers, canteens, commissaries and institutional kitchens producing at volume against a fixed cost, a fixed portion and a fixed taste.
Your brand on a formulation developed, validated and manufactured to your specification, pack format and target market.
Shelf-stable at ambient, with export-ready documentation for diaspora retail, ethnic food shops, mainstream grocery, cash and carry and foodservice distributors in the USA, the UK, the EU and the Middle East.
A finished gravy component that travels in the box and needs nothing at the other end but heat and a protein.
Ready-to-Cook kits and cook-at-home ranges where the base carries the flavour and the consumer adds the rest.

In short
Ten reasons a manufacturer, a chain or an exporter ends up working with us — and keeps working with us once the first product is on the shelf.

A cooked, ready-to-use Indian gravy base made from tomatoes, onions, edible oil, herbs and spices. It is the part of a curry that takes the longest to make — sautéed, simmered and reduced — supplied finished, sterilised and shelf stable, so a production line or a kitchen starts from a base rather than from raw material.
As the cooking base for Indian curries and gravies in Ready-to-Eat and Ready-to-Cook meals, packaged curries, sauces and gravies, frozen products, meal kits and institutional catering. You add the protein, vegetable or paneer and finish to your recipe; the base carries the flavour, colour and consistency.
A tomato sauce is a finished condiment — usually acidified, often sweetened, and eaten as it is. A tomato gravy base is an intermediate: a cooked masala base of tomato and onion with oil and spices, made to be cooked into a dish. The two differ in pH, fat and spice load, which is also why they need different thermal processes.
By process and packaging, not by additives. The filled pack is sealed and sterilised in a retort on a validated scheduled process until the product reaches commercial sterility, then held in high-barrier retort packaging that keeps oxygen, moisture, light and microorganisms out. That combination gives ambient shelf life with no artificial preservatives.
Yes. Spice level, oil and salt, consistency, tomato-to-onion ratio, pack size and pack format are all adjustable, along with clean-label, vegan, no-onion-no-garlic and allergen-controlled variants. Every change is re-validated — a reformulated base gets its own scheduled process and its own shelf-life study before it goes into production.
Broadly yes — the vocabulary changes with the market. In India and among diaspora brands it is a gravy base or masala base; in the UK trade the same thing is a cooking sauce, curry sauce base or base gravy; in the United States and continental Europe it is usually a culinary base, sauce base, flavor base or simmer sauce. All describe a cooked intermediate that a kitchen or a production line finishes into a dish, rather than a condiment eaten as it is.
Yes — private label, white label, own label, OEM, third-party and contract manufacturing are all available. Your brand goes on a formulation developed and validated to your specification, in your pack format, for your market. Where a co-packer or co-manufacturer is already in place, we can transfer the validated scheduled process and documentation to them instead.
It is established rather than assumed. Thermocouples are placed at the cold spot of the actual pack at the agreed fill weight, a heat penetration study is run through a full cycle, and the accumulated lethality is calculated as equivalent minutes at 121.1 °C. That figure, with the time, temperature, pressure and fill it depends on, becomes the scheduled process. Change a critical factor — viscosity, particulate size, fill weight, pack — and it has to be re-established.
Yes. Each market has its own frame: the United States regulates the product under 21 CFR 113 for low-acid foods, with an establishment registration and a scheduled process filed with the FDA; the European Union applies its composite product entry rules, health certification through TRACES NT and labelling under Regulation (EU) 1169/2011; UK and EU buyers commonly ask for BRCGS, SALSA or IFS Food at the manufacturing site. The product ships with a specification sheet, certificate of analysis, nutritional analysis, allergen statement, shelf-life data and licence details, plus the health certificate and export paperwork the shipment requires.
Both depend on pack format and production run rather than on a fixed list, so tell us the volume, the pack and the market and we will confirm. Samples are available for evaluation and line trials before you commit to a run, and a pilot batch can be produced first where the formulation is being customised.
Ambient, with no refrigeration and no cold chain. The declared figure comes from accelerated and real-time stability studies on the finished pack — microbiological, physico-chemical and sensory — rather than from a rule of thumb, and it is declared for the specific pack the product ships in. A change of film, closure or fill weight means the study is repeated.
