Product Development Chef – Senior


Job Description:

  • Assist in data gathering for new product specifications.
  • Confirm product formulations and other information for constructing product profiles.
  • Create new recipes and refine taste profiles through experimentation and finding substitutes for current formulae that are known to trigger digestive sensitivities.
  • Develop ideas from food preparation processes for marketing purposes.
  • Develop product improvements based on sensory testing and consumer data and modifying recipes.
  • Record the flavor, portion, and price that consumer prefer, making tasty and visually appealing food products based on that.
  • Establish product specifications and documentations.
  • Make recommendations in the design of new manufacturing processes or to change current equipment or processes.
  • Modify new product recipes and ingredient selection while taking note of nutrition, shelf life and regulations.
  • Plan, manage and run panel sessions and sensory tests on food products.
  • Refine recipe formulation for mass production purposes.
  • Review ingredients to meet customer needs and requirements.
  • Review methods to improve quality of new food products and compliance with food regulations during mass production.
  • Suggest alternative ingredients and food preparation processes to meet mass production and compliance needs.
  • Suggest changes to new food production processes.
  • Support sales team by preparing samples for local and overseas customers.
  • Troubleshoot production processes to resolve production, quality and regulatory compliance issues.
  • Coordinate with technicians, food scientists to advance the food-processing sector and experts to complete work efficiently and within a time frame.
  • Collaborate with key internal and external stakeholders to deliver projects according to established timelines and budgets.
  • Communicating project updates and information to leadership and contributing to building flavour knowledge and capability for the R&D organization.
  • Exemplify the Company’s growth behaviour, being inclusive, iterative curious and empowered.
  • Ensure that analysis results are provided in the best way possible and possible recommended actions are derived and deal independently with complex issues.
  • Implement guidelines and structures for documenting and managing the results of analyses in SAP.
  • Implement in-house and statutory specifications and guidelines on hygiene, HACCP, food safety, occupational safety and environmental protection, ensuring that these are implemented in subordinate organizational units.

Required Qualification: A bachelor’s degree in Hotel Management or culinary arts certificate, plus professional experience and certificate, related field is required.

Job Purpose:
The Research and Development (R&D) Chef creates new recipes to improve food product from the organisation. The role is to designs new recipes in consideration of ideas and market demand for new products by working closely with food technologists. Improves recipes and preparation methods to meet mass production and regulatory needs. Also helps to design marketing strategies based on the approach and ideas in creating new products.
Work Schedule:
Monday – Saturday (except second Saturday)

Skills Required:

  • Skilled in Culinary arts
  • Works in a kitchen or laboratory.
  • Good knowledge on food science and is familiar with nutrition and mass production needs.
  •   Sound understanding of cultural and culinary trends.
  •   Basic knowledge of food production and processing; thorough knowledge of food safety standards, HAACP, and Serve Safe Certification; basic culinary knowledge related to equipment and technical skills
  • Must have thorough knowledge of food products, recipes and procedures writing, and food costing
  • Very creative in developing and presenting products.
  • The ability to work independently
  • Keeping current with trends, consumer insights, and competitive restaurant/menu strategies
  • Requires independent, analytical and creative work efforts regarding proper procedures, planning and follow-up
  • Meticulous attention to detail, particularly with regard to health, safety and hygiene
  • Must have excellent written and verbal communication skills
  • Strong teamworking skills
  • Requires adaptability to handle multiple projects simultaneously while remaining an awareness of completion dates and understanding of management principles, especially of time management
