Job Function/Role Summary:
The Culinary Expert in the Food & Beverages product development unit at FRL, Chennai will play a pivotal role in creating and refining recipes tailored to client requirements. This role involves standardizing recipes and ensuring compliance with regulatory standards, including AWAES, FSSAI, FDA, and EU regulations. The Culinary Expert will collaborate closely with food technologists and regulatory experts to develop innovative and compliant food products that meet global standards. Document ingredients, formulations, processes, and testing involved with new product research and development or enhancements to existing products. You will also participate in sensory evaluations and trials of products.
Required Qualification:
Bachelor’s degree in culinary arts, Food Science, Food Technology, or a related field. A master’s degree or relevant certifications in Food Product Development, Culinary Innovation, or Regulatory Affairs would be an added advantage.
Required Experience:
Industry Experience: Prior experience in food and beverage product development within a commercial setting is preferred, especially in tailoring products to meet specific client requirements.

Essential Duties and Responsibilities
- Recipe Development: Create and customize recipes based on client specifications, ensuring that they meet the desired flavor profiles, nutritional values, and sensory attributes.
- Standardization: Standardize recipes to ensure consistency in quality, taste, and texture across production batches, while adhering to food safety and regulatory requirements.
- Costs optimization and scale up
- Regulatory Compliance: Ensure all recipes and product formulations comply with relevant regulations, including AWAES, FSSAI, FDA, and EU standards. Stay updated on global regulatory changes and incorporate them into product development processes.
- Supplier Collaboration: Partner with external ingredient suppliers to achieve product development goals and explore opportunities for innovation.
- Collaboration: Work closely with food technologists and regulatory experts to ensure product development aligns with industry standards and client expectations. Foster strong communication and collaboration across teams.
- Ingredient Knowledge: Utilize an extensive knowledge of diverse ingredients and their sensory characteristics from around the globe to innovate and enhance product offerings.
- Sensory Evaluation: Participate in sensory evaluations and trials to ensure that developed products meet both client and consumer expectations in terms of taste, texture, aroma, and appearance.
- Documentation: Maintain detailed records of recipe development, ingredient sourcing, testing procedures, and compliance measures. Ensure all documentation is accurate and accessible for regulatory reviews.
- Project Management: Track and manage product development projects, regularly report on progress, and make actionable recommendations to ensure successful outcomes.
Work Schedule:
Full Time, Monday to Saturday, 10:00a.m. to 7:00pm. Hours may vary on occasion, depending on workload.
