What Our client required?

Tortilla with an extended shelf life

Assignment: Tortilla based on wheat is highly automated today, and our requirement is to develop wheat-based and enriched with a novel functional ingredients-based tortilla. Further, our client requested to extend its shelf life of commercially baked tortillas to several months by optimising the recipe, package and production process.

What did we do?

Solution: Our team of food technologists formulated tortilla, which has extended shelf life. The end product also has enhanced dietary fibre and polyphenol content compared to normal corn or only wheat-based tortilla
