Tortilla with an extended shelf life
Assignment: Tortilla based on wheat is highly automated today, and our requirement is to develop wheat-based and enriched with a novel functional ingredients-based tortilla. Further, our client requested to extend its shelf life of commercially baked tortillas to several months by optimising the recipe, package and production process.
Solution: Our team of food technologists formulated tortilla, which has extended shelf life. The end product also has enhanced dietary fibre and polyphenol content compared to normal corn or only wheat-based tortilla,
