The Challenge

What Our client required?

Assignment: The client required spicy seasoned veg pickle with the traditional taste of south India. 

This case study focuses on the following: 

  • Formulation of the vegetable pickle that has good sensory properties. 
  • To have an authentic south Indian taste with enhancement in shelf life.  

 

Challenges:

  • During the preparation of the pickles, maintaining temperature and an air-tight environment is mandatory to keep the pickle free from microbial contamination. 
  • The shelf-life duration might be shortened once the pickle is opened.  

What did we do?

Solution:

  • Optimizing and standardizing the temperature and processing conditions can avoid contamination and enhance the shelf life.  
  • We need to work on the packaging and preservatives added to the product to enhance the shelf life once the pickle container is opened
