What Our client required?

Assignment:Formulation of a natural fruit juice from sweet and ripe fruits. 

This case study focuses on the following: 

  • This study aims to formulate natural fruit juice with natural ingredients, natural flavors, and no added sugar. 
  • The product should be formulated in sterile conditions and aseptic packaging.  

Challenges

  • The natural fruit juice should be formulated per the client’s specifications using natural ingredients and no added sugar.  
  • Since the product is formulated using natural ingredients, there is a challenge of sedimentation, where natural fruit fibers tend to get separated.

Solution 

  • Based on different trials, the fruit juice was optimized for obtaining the natural flavors and sweetness, which was done by varying the concentration of the juice. 
  • The product was homogenized to prevent sedimentation. Homogenization is the process of making a uniform mixture of substances to avoid phase separation.
