What Our client required?

Assignment:

The formulation of natural and healthy millet laddu for children and adults, with the best sensory attributes at low cost and eyecatching food packaging material. 

This case study focuses on the following: 

  • Formulation of millet laddu – The millet laddu was formulated using the foxtail millet, and nuts were added. No preservatives were added. 
  • Taste – The foxtail millet laddu should be sweet and not bitter. 
  • Packaging material – Eye catching food packaging material should be used. 
  • Sweetness – Jaggery was used as a sweetener.

Challenges:

  • Formulation of millet laddu –  The ratio of millet and nuts should be optimized to give the desirable sensory characteristics. 
  • Taste – The millet gives a mildly bitter flavour, which needs to be optimized.  
  • Packaging material – The packaging material should be attractive to consumers.

Solution:

  • Formulation of millet laddu – The formulation considered the sensory attributes of the product, such as taste, colour and flavour. After sensory evaluation and multiple trials, the product was modified to have superior sensory qualities. 
  • Taste – The bitter taste from the millet was optimized by mild roasting of millets and adding coconut to the product, along with nuts which gives a rich taste. 

Several combination analyses were conducted to increase the sweetness and lessen the bitterness of the product. Jaggery was chosen as a sweetening agent. It was prepared into a syrup, and the sweetness was adjusted for the product. 

  • Packaging material- After several trials, attractive packaging was decided. The food packaging of the foxtail millet laddu was appealing to all age groups.
