The Challenge

What Our client required?

Assignment: The client required a lowcalorie gummy with no added sugar and fruit flavour.

This case study focuses on the following: 

  • This study aims to develop gummies as per the nutritional aspect of low-calorie intake with no added sugar. 
  • The study aims to formulate gummies with fruit flavours and good sensory properties. 

Challenges:

  • Formulating gummies that are low in calories with no added sugar and chewy texture. 
  • The most challenging part was the flavour addition and drying of the gummies, and during the drying period,  the gummies lacked any flavour. 

What did we do?

Solution:

  • Based on different trials, the firm and chewy texture was optimized by varying the temperature and time of cooking and drying for a recommended time at a suitable temperature. 
  •        To prevent flavour loss, the fruity flavour was added to the gummies at the end of cooking. The drying was carried out in humidity controlled room to avoid flavour loss. 
  •        The low-calorie gummies were formulated by replacing sugar with high-intensity natural sweeteners.
