Assignment: The client required an instant chicken soup mix with natural ingredients and no added preservatives

This case study focuses on the following: 

  • This study aims to develop an instant chicken soup mix with real chicken and vegetables.
  • Formulation of chicken soup with natural flavours for good sensory properties.

What did we do?   

Challenges 

  • Formulating the ready to cook food products  with natural ingredients per client’s requirements to provide instant soup mix with no artificial flavours.
  • The most challenging part is the dehydration of the chicken and vegetables; the dehydration process should be done properly, which can influence the shelf life of the final product.
  • Another challenging part is achieving the desirable consistency of the product.

What did we do?

Solution 

  • Based on different trials, the product was formulated using natural ingredients and natural flavours the product was optimised in terms of sensory profile.
  • For the proper dehydration of the chicken, it was first cut into small pieces, and the dehydration was done in a tray dryer. The same process was done with blanched vegetables to yield dehydrated vegetables.
  • The desirable consistency of the final product is optimised by using stabilisers.
