What Our client required?   

Assignment: The client required a multi grain creamy banana porridge that is gluten free and contains no artificial sweeteners or flavours. 

This case study focuses on the following: 

  • This study aims to develop a multigrain porridge with added vitamins and minerals without artificial sweeteners. 
  • The formulated porridge should have a natural banana flavour for good sensory characteristics. 

 

What did we do?   

Challenges 

  • The product should be gluten free with no artificial sweeteners or added sugar.   
  • The most challenging part was the extrusion of the product; that is, the product should be extruded and tempered properly to get the desired texture of the final product.

Solution 

  • Based on different trials, the product was optimized to get the natural banana flavour and sweetness. 
  • Initially, extrusion was done to get the proper texture, and then the extruded product was dried and taken into the tempering process. In the tempering process, the product is heated and then cooled.
