What Our client required?

Assignment: The client required an Instant Coconut Chutney mix with an enhanced shelf life.

This case study focuses on the following:

  • Formulation of the Coconut Chutney mix with good sensory properties 
  • Enhancement of shelf life with no added preservatives. 

Challenges:

  • Formulating coconut chutney with a pleasant aroma with natural ingredients and spices. 
  • The most challenging part in formulating coconut chutney is undesirable flavour changes due to the oxidative rancidity of oil in coconut. 

What did we do?

Solution:

  • The trials enabled determining the spices for formulating coconut chutney with a pleasant aroma. 
  • Antioxidant was added with coconut chutney to prevent oxidative rancidity.
