Today’s Task
Event: Plant-Based Complete Nutritious Beverage: Ingredient Screening and Formulation Optimization
Today’s task focused on the development of multiple flavor variants of plant-based nutritious beverages. These beverages are intended to provide complete nutrition in a convenient ready-to-drink format. The project aimed to select ingredients with high nutritional value to meet the desired Recommended Dietary Allowances (RDA) of the target audience. Various ingredient combinations, functional components, flavor systems, and texture-enhancing elements were evaluated to create products that align with modern health and wellness expectations. The development process emphasized nutritional balance, sensory acceptability, and physical stability while maintaining flexibility for future product optimization.
Developing a complete nutrition beverage is always an exciting challenge because it requires balancing multiple product attributes simultaneously. Unlike conventional beverages, complete nutrition products must provide nutritional value, satiety, texture, and flavour while remaining easy to consume. Before starting today’s work, I anticipated challenges related to ingredient compatibility, flavour integration, and maintaining a smooth drinking experience. I was particularly interested in understanding how different functional ingredient categories would interact within the beverage matrix and how those interactions might influence sensory perception and product stability. At the same time, I was eager to explore new formulation possibilities and identify opportunities for improving overall consumer acceptance.
🧪 What We Did Today?
Product Development Plan
We approached the ingredient selection and formulation optimization in three major phases:
Plant protein sources, carbohydrate ingredients, healthy fats, dietary fibers, vitamin and mineral premixes, stabilizers, natural flavors, and sweeteners were selected based on their nutritional functionality and compatibility within the beverage matrix. All dry ingredients were sieved and inspected to ensure consistency, purity, and ease of dispersion.
Multiple beverage prototypes with different flavors were prepared using different combinations and ratios of selected ingredient categories. Each prototype was evaluated for appearance, consistency, flavour delivery, and overall consumer appeal.
Water was heated within a temperature range of 35–50°C to facilitate ingredient hydration and dissolution. Water-soluble components were gradually incorporated under continuous agitation at 300–800 rpm for 10–30 minutes. Different temperature and mixing conditions were evaluated to identify the optimum combination that provided complete dissolution, uniform dispersion, and minimal lump formation.
Plant-based protein ingredients, lipid components, and stabilizing systems were incorporated into the hydrated aqueous phase under controlled mixing conditions. Agitation speeds ranging from 800–2000 rpm and mixing durations of 10–25 minutes were evaluated to optimize protein hydration, emulsion formation, and texture development. Sweetening and flavouring systems were subsequently added, and formulation consistency was monitored throughout the process.
The beverage matrix was subjected to homogenization under varying shear conditions ranging from 3000–8000 rpm for 5–20 minutes to improve ingredient dispersion, emulsion stability, and mouthfeel characteristics. Process parameters were optimized based on viscosity, suspension stability, and sensory performance. Final adjustments were made to pH, total solids, and rheological properties before filtration and product standardization to obtain a stable ready-to-drink beverage.
Observations & Learnings
The two different plant proteins evaluated showed different results. One plant protein showed high protein content, highlighting the need to balance protein quality with functional performance. Some protein sources exhibited incomplete dispersion, demonstrating that solubility is a critical factor for RTD beverage applications. Also, increased fat content improved texture and creaminess, indicating the importance of fat selection for consumer acceptance. Micronutrient fortification influenced flavor at higher concentrations, requiring careful optimization. Dietary fiber significantly increased viscosity, emphasizing the need for controlled inclusion levels. Certain ingredients required more intensive homogenization, while effective emulsification improved suspension stability and overall product quality.
Interpretation
The sensory evaluation results indicated that all four plant-based meal replacement formulations achieved high consumer acceptance, with overall scores above 8.0 on the 9-point hedonic scale. The Variant 1(V1) formulation received the highest overall acceptability score (8.7), attributed to its rich flavor, pleasant aroma, and creamy mouthfeel. The Variant 2 (V1) variant ranked second (8.4), demonstrating strong appeal due to its balanced coffee flavor and smooth texture. The Variant 3 (V3) formulation (8.1) was well received for its refreshing taste and sweetness balance. The Variant 4 (V4) formulation (8.0) also showed good acceptance, although its milder flavor profile resulted in slightly lower sensory ratings compared to the other variants.

V19 plain is the best anf finalized from our side. It is accurate in taste(plain), texture, and after tastte is also not bitter at all, He loved it as a plain flavour. V19 cardomon should add more flavour rest everything is fine.
Hello, I am using the oppurtunity to appreciate the teams effort we will be picking V1 for cola, So far we don't have any complain about it, I will like to know the type of sweetner use, during the taste test some said it too sweet while some said it for orange we are picking V2, no complain too, thank you once again
