What We did Today?

Event: RTE Baby Puree Development: Formulation & Evaluation Event

Today’s task was to formulate an organic ready-to-eat (RTE) infant puree for a client from Saudi Arabia. We planned to prepare two variants by combining apple and carrot for high palatability and enhanced acceptance, leveraging their natural sweetness. The product will be strategically fortified to meet the SFDA nutritional limit, incorporating vitamin D and ascorbic acid (vitamin C) to promote skeletal mineralization and optimal bone development by supporting calcium homeostasis. Furthermore, Docosahexaenoic Acid (DHA) will be added to provide a vital omega-3 to support neurodevelopment and visual acuity. Certified organic ingredients were all selected to ensure it organic authenticity. All the ingredient ratios and concentrations strictly adhere to the specific nutritional and safety limits mandated by regulatory bodies such as the US FDA and SFDA, and clean label formulation following meticulous research to ensure comprehensive safety and efficacy.

How I Felt Before Starting – Developing a RTE Baby Puree

The primary challenge lies in achieving the ideal consistency without any lumps or detectable fruit or vegetable chunks. Functional fortifiers must also be incorporated at the appropriate temperature to preserve their effectiveness. Because the formulation uses a limited number of ingredients and minimal processing and it is essential to retain the maximum nutrient content to ensure optimal nutritional performance. For this, we conducted regulatory research and nutritional retention research to devise a product development and troubleshooting plan, ensuring safety and efficacy.

🧪 What We Did Today?

Product Development Plan – Preparation and Quality Assessment of RTE Baby puree

    • Formulation of natural and shelf-stable RTE baby puree, while ensuring a smooth texture for easy swallowing.
    • Fortification with vitamin D to support bone development, enhance calcium absorption, and help prevent rickets.
    • Inclusion of vitamin C and DHA to strengthen immunity, improve iron absorption, and support healthy brain development.

Key Steps Followed Today:

  • Fresh fruits and vegetables were procured from certified organic farms to ensure quality and safety.
  • The produce was thoroughly washed and peeled before further processing.
  • Essential vitamins and other functional nutrients were sourced from reputable, recognized suppliers to maintain nutritional integrity.
  • Peeled apples and carrots were blanched at 95°C for 5 minutes to soften the texture and reduce microbial load.
  • After blanching, the produce was removed from the hot water and cooled to room temperature before being transferred to a high-shear blender for homogenization.
  • The puree was passed through a mesh of less than 200 microns to achieve a smooth, baby-friendly consistency.
  • Measured quantities of vitamin D, vitamin C, and DHA were incorporated under controlled agitation to ensure uniform dispersion.
  • The final puree was pasteurized to maximize nutritional retention, enhance shelf life, and protect against microbial spoilage.

  • The organic RTE baby puree was aseptically filled into retort pouches to maintain hygiene and product stability.
  • Finished products underwent organoleptic evaluation, proximate composition analysis, and shelf-life assessment to ensure safety, nutritional adequacy, and consumer acceptability.

📚 What I Learned?

Observations & Learnings

  • A noticeable colour difference was observed between the two variants due to the inclusion of blanched carrots.
  • The overall consistency remained smooth and well-suited for weaning foods, supporting easy swallowing and digestion.

Shelf life:  The sealed or unopened product had a shelf life of up to 6 months under recommended storage conditions. Once opened, the product should be consumed within 24 hours to ensure safety and optimal quality.

What Went Well

  • The blanching process effectively softened the fruits and vegetables without causing them to become mushy.
  • Blending was carried out efficiently, resulting in a homogeneous puree with no lump formation.
  • The final puree exhibited good consistency, appealing color, and an overall pleasing appearance.

⚠️ What Could Be Improved

  • Blanching time/temperature, blending speed, and pasteurization conditions can be further optimized to improve nutrient retention and color stability.
  • Exploring additional packaging formats (e.g., spout pouches or eco-friendly materials) could enhance usability and sustainability.
  • Standardizing the timing and method of adding Vitamin C and DHA may help further minimize degradation and improve batch-to-batch uniformity.
