Dark compound chocolate

Event: Today, I decided to work on the formulation of Dark compound chocolate

How I felt it (initially before executing the actual task): I love to develop innovative food and beverage products.

Actual Task: Product development

What did I learn?

Chocolate is one of the most loved desserts around the world. Chocolates are made from cacao seed kernels, which primarily taste bitter and have a high fat content. Different types of chocolates are available in the market, like dark chocolate, milk chocolate and white chocolate. This project focuses on making dark chocolate from cocoa powder, low-calorie sweetener and vegetable fat. Dark chocolate is known to be rich in antioxidants and helps prevent cardiovascular diseases. For developing this product, the client requested to use organic cocoa powder in the formulation. The formulation of the product is done with only plant based or vegan ingredients. The dark chocolate was formulated after procuring the necessary ingredients with no added sugar or preservatives. Once the formulation is done, the product is kept for shelf-life study.

Outcome:

A ready to eat dark chocolate with organic ingredients and good sensory properties was formulated at the Food Research Lab.

What went well?

The product had excellent sensory properties since it was formulated after extensive lab trials. However, we would like to carry out more trials to improve the stability of the product.

What could I have done better?

A better formulation could have been carried out, with improvements in the product’s shelf life.
