What Our client required?   

Client’s Objective: Our client sought the development of high-quality Sweetened Condensed Milk, emphasizing the importance of a meticulously engineered formulation process. This project aimed at achieving an optimal balance between taste, texture, and shelf-life, catering to the evolving needs of the dairy industry and consumer preferences. Through a blend of scientific research and innovative dairy processing techniques, our objective was to surpass industry standards and deliver a product that stands out in the market for its quality and sustainability 

Assignment: Formulation of Shelf-Stable Sweetened Condensed Milk 

Client Requirement: A client approached us with the need to develop Sweetened Condensed Milk characterized by a prolonged shelf life when stored at ambient temperatures. This product was aimed at consumers seeking the traditional, creamy taste of sweetened condensed milk without the constraints of refrigeration.  

Objective: The primary goal of this study was to innovate a formulation of Sweetened Condensed Milk that not only meets the taste and quality expectations of our client but also remains shelf-stable at room temperature for an extended period.  

Challenges Encountered:  

Formulation Stability: Crafting a formula for Sweetened Condensed Milk that remains shelf-stable over time while retaining its desirable sensory properties posed a significant challenge.  

Thermal Processing Coagulation: A critical hurdle was preventing the coagulation of milk proteins during the thermal processing phase, which could adversely affect the product’s texture and overall quality.

Innovative Solutions:  

Optimization of Milk and Sugar Proportions: Through a series of meticulous trials conducted by our food technologists, we optimized the ratio of milk to sugar. This balance was crucial in achieving a product that not only stands stable at ambient temperatures but also excels in sensory quality.  

Thermal Stability Through Temperature Control: Our microbiologists identified the root cause of protein coagulation as the inability of the milk to withstand intensive heat treatments. By optimizing the processing temperature to not exceed 70°C, we successfully maintained the thermal stability of the product, preventing undesirable coagulation.  

 Approach:  

Our team of microbiologists and food technologists embarked on this project with a customer-centric approach. The initial phase focused on understanding the precise requirements of our client, followed by addressing the twin challenges of formulation stability and thermal processing coagulation. Through innovative solutions and optimizing both the formulation and the processing techniques, we navigated these challenges effectively.
