The Challenge
Develop using a locally available functional jam.
Assignment: Formulation of Mixed fruit Jam from locally developed fruits.
Solution: Food Research Lab, had formulated jam blend with different combinations of fruit pulp and natural sugars. Jam was analysed for viscosity, pH, Titratable acidity, specific gravity, brix determination and finally sensory evaluation along with shelf life. Final product was appreciated by the client. Jam was packed in sterilized polypropylene jars
