What did I learn?
Coconut pudding is among the most relished desserts. The one formulated at Food Research Lab does not contain any artificial sweeteners and consists of coconut puree, milk, sugar, and corn flour. Steps were taken to ensure uniformity and that no clumps were formed. The mixture was then poured into molds and refrigerated for a suitable duration. The product was then stored at a desired temperature for shelf life analysis.

Outcome:
A ready-to-eat coconut pudding was formulated with desirable sensory properties and can be consumed as a dessert.

What went well?
I have done the lab trials, and the product has turned out well. However, we would like to do further trials to enhance and refine the product further.
What could I have done better?
As a next step, I would like to improve the formulation, which can have a longer shelf life.
