Event:  Today, I had a plan to work on the formulation of Mint Candy

How I felt it (initially before executing the actual task): I always love to handle any project that comes with product formulation

Actual Task: Product formulation

Our goal for the day was to embark on the formulation of a Citrus and Lemon Marinade. This project merges culinary art with the science of food preservation and flavor enhancement. My enthusiasm for product formulation projects, especially those involving diverse flavor profiles, set a positive tone for the day’s work.  

Initial Thoughts: As someone deeply passionate about the science of flavor and food formulation, the prospect of creating a marinade that not only enhances the taste of food but also extends its shelf life presented an exciting challenge. My anticipation was to apply theoretical knowledge and innovative techniques to produce a high-quality, flavorful marinade.  

The Task – Product Formulation: Our approach to the Citrus and Lemon Marinade formulation was grounded in understanding the chemical properties of our ingredients. The acidic nature of citrus and lemon, key components of our marinade, plays a pivotal role in the marination process. These acids denature proteins in meats and seafood by disrupting hydrogen bonds within collagen fibrils, making them tender.  

The formulation process began with a base marinade to which we meticulously added salt, chili powder, turmeric, fenugreek, ginger, coriander powder, cumin powder, white onion granules, parsley, and onion powder. The selection and balance of these ingredients were critical to achieving the desired flavor profile while ensuring the marinade’s effectiveness in protein denaturation without overpowering the natural flavors of the food.  

Step 1: As an initial step the ingredients are measured accurately to ensure and maintain the flavour, taste and aroma of the product. The base marinade along with various spices, condiments and flavours are weighed.  

Step 2: The weighed ingredients are then mixed for the even distribution of materials.  

Step 3: This image represents the Trial of the product. The taste and flavour of the product was on point. It is stored in airtight container to check the stability of the product.

Outcome :

The flavour of the product was citrusy. The stability of the product must be monitored to check any occurrence of flavour loss and to determine its shelf life.

Technical Challenges: Achieving an even distribution of flavors throughout the marinade was a primary focus. This required a thorough mixing process, which was carefully monitored to ensure that each ingredient contributed to the overall flavor without dominating. Additionally, the preservation of the marinade’s quality over time posed a significant challenge. We utilized airtight containers for storage, a crucial step in maintaining the marinade’s integrity and extending its shelf life.  

Learnings: This project reinforced the importance of precision in flavor formulation and the balance between acidity and seasoning for optimal marination effects. Furthermore, it highlighted the role of proper storage solutions in preserving the quality of food products.  

 

Outcomes and Reflections: The initial lab trials were successful, yielding a product that met our expectations in terms of flavor and quality. However, there is a continual need for optimization, particularly in refining the flavor profile and extending the product’s shelf life. Future trials will focus on adjusting ingredient ratios and exploring natural preservatives to enhance the marinade’s appeal and usability.  

 

Looking Forward: Reflection on today’s work suggests that further refinement in the balance of flavors and preservation techniques could enhance the product’s market viability. Pursuing a deeper understanding of the interaction between marinade ingredients and various types of meats and seafood will be critical in our ongoing efforts to perfect the Citrus and Lemon Marinade.
